DOG BISCUIT RECIPES

Peanut Butter Dog Biscuits

2 cups organic whole wheat flour
1 tablespoon baking powder
1 cup organic peanut butter
1 cup organic soy milk

Mix and drop by spoonfuls onto greased baking sheet. Bake at 375 for 20 minutes.


Gingerbones Dog Biscuits

6 cups organic whole wheat flour
1 cup blackstrap molasses
1 cup water
1.2 cup canola oil
4 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves

Mix and drop by spoonfuls onto ungreased foil-lined baking sheets.
Bake at 325 for 30-35 minutes.


Banana Mutt Cookies

1-1/2 cups ripe organic mashed bananas
½ teaspoon vanilla
3 cups organic oats
¼ cup organic applesauce

Mix and drop by spoonfuls pressing each flat with a fork on ungreased baking sheet.
Bake at 350 for 15 minutes.

DECADENT GERMAN CHOCOLATE BROWNIES
(Veg Advantage Recipe of the Month)

Eco-Cuisine's Chocolate Brownie Dry Mix and Instant Vanilla Soy Pudding Mix are great-tasting, nutrient-rich products that have a wide variety of applications. You can use the brownie mix to create everything from a traditional brownie to Mocha-Cheesecake Brownies and Chocolate-Orange Brownies With Mocha Chocolate Chips. Classic Rice Pudding, Pumpkin Torte, and Peanut Butter-Cream Icing can all be made with the vanilla pudding mix.

For the Brownies:
1 lb. Eco-Cuisine Chocolate Brownie Dry Mix
1 cup water or soy milk

~ Preheat the oven to 350° F.
~ In a mixing bowl, combine the brownie mix with the water or soy milk and mix until evenly dispersed (don't overmix).
~ Pour into an oiled and floured 10 1/4 x 6 1/2 x 1 1/4-inch baking pan. Bake for approximately 15 to 20 minutes, or until the center springs back when gently pressed.

Variation: For a fudgier brownie, add 1 oz. of sugar and for a cake-like brownie, add 1 oz. of flour.

For the Icing:
4 oz. Eco-Cuisine Instant Vanilla Soy Pudding
1 1/4 cups hot water
1/4 cup melted Spectrum brand shortening
1 Tbsp. molasses
2 tsp. pure vanilla extract
1/2 cup chopped sweetened coconut*
1/2 cup coarsely chopped roasted pecans

~ In a 2-quart mixing bowl, combine the pudding mix with the hot water and whip until evenly dispersed.
~ Add the shortening, molasses, and vanilla extract and mix with a hand-held mixer on medium speed for 20 to 30 seconds. Add the coconut and pecans and stir to incorporate. ~ Spread over the cooled brownies.

*Variation: Toasted coconut can also be used.

Makes one pan of brownies.

10 Quick & Easy Vegetarian Meal Ideas

1. Mexican Mix: Mix rice with sauteed onion, chili powder, salsa, and canned kidney beans. Serve with corn bread.

2. Creative Pasta: Toss hot pasta with garlic, olive oil, parsley, and zucchini or other fresh vegetables.

3. Have a Cookout: Serve veggie burgers with lettuce, tomato, and barbecue sauce.

4. Garden Clubs: Sandwiches with mustard, thinly sliced avocado, tomato and red onion.

5. Oatmeal: Experiment with adding walnuts, maple syrup, raisins, cinnamon, apples, dried apricots or coconut.

6. Perfect Parfaits: Layer granola, soy yogurt and fresh fruit. These treats pack in enough nutrition to count as a meal.

7. Cool Couscous: Cook couscous in tomato juice instead of water and top with chickpeas and sauteed veggies.

8. Real-World Ramen: Cook ramen noodles with a little tahini. Add cubes of marinated baked tofu and vegetables.

9. Beautiful Bean Salad: Combine drained cans of chickpeas, lima beans, kidney beans and green beans. Add chopped celery and scallions and toss with vinaigrette. Serve with bread or in a pita.

10. Great Potatoes: Saute drained canned new potatoes with onion and garlic. Add spinach and drained, rinsed cannellini beans. Heat until spinach is wilted.
